Hot Chicken Tenders

If you haven't traveled to Nashville, TN and tasted Nashville Hot Chicken at a place like Hattie B's then you're missing out.  Hot chicken is southern-fried chicken smothered in a Cayenne peppered sauce.  Definitely not for the faint-of-heart, but try our recipe inspired by Chef John from FoodWishes.com Feel free to use your favorite hot sauce in the marinade, we just grabbed what was in our pantry. Also, as you can see from Hattie B's Menu, they offer everything from Mild to Damn Hot! So if you're feeling up to it, adjust the amount of Cayenne Pepper from 2 to 4 tablespoons. Definitely try the hot chicken sandwich with the pimento mac and cheese! 

Roasted Spaghetti Squash

Spaghetti squash is a healthier alternative to your usual pasta and it can be tasty, too!  It can also be a little intimidating if you've never prepared one before because there are various methods to use... boiling, roasting, steaming, microwaving... but which one is the best?  Here's our answer: Note: Cutting your squash in the middle (rather than long-ways) is safer for your fingers, easier to cut, and gives you longer, fork-twirling spaghetti strands. After your squash is prepared you can add all sorts of ingredients like marinara sauce and meatballs, or try a creamy Alfredo sauce with pancetta.  Your spaghetti squash can even be prepared ahead and stored in the fridge until you use it. Charcuterie Board for Two

Some nights we opt to do a simple wine & cheese meal instead of preparing a full dinner.  Today we found some tasty treasures at Aldi to create our own charcuterie board for two.  Aldi never disappoints with their endless variety of specialty cheeses for cheap, but our favorite find of the day had to be the Cheddar Sunflower Crisps.  We even found our Pinot Noir there! The French term, "Charcuterie," is the art of preparing cured or smoked meats.  Here we have some Italian salami, hot sopressata, and capicolla.  We also included 3 types of cheddar: truffle, cave-aged, and cranberry studded.  Add some fruit, pickles or olives to your board and you've got a tasty  and romantic meal for two.
